To make tandoori chicken (or fish or beef or even tandoori veggies), you need two essential components - lots of heat & lots of flavor.
For the heat, you may not be able to exactly simulate the cooking process of a tandoor - a traditional clay oven from South Asia - but a wood fire grill, a gas grill, or even the broil setting in your oven can get the job done.
For the flavor, that's as simple as creating a yogurt based marinade with our bright, aromatic, handcrafted Tandoori Seasoning. We combine rich, red spices - Sweet Spanish Paprika and the essential, vibrant kick of Kashmiri Chili Powder - with a hint of turmeric to create a bright reddish-orange blend. Then we mix in the warming spices commonly used in North Indian cuisine like ginger, cumin, garlic, and cardamom. For balance, we mix in coriander, and for a citrus note, dashes of mango powder. Finally, to emphasize that smoky tandoori flavor, we add in a touch of Smoked Spanish Paprika.

For a pound of meat, create a tandoori marinade by mixing about a tablespoon of our Tandoori Seasoning with 1/4 cup yogurt, juice from a few wedges of lemon or lime, and a dash of salt to taste. Marinate the meat for a few hours before cooking on the grill.
