Many of us may recognize the flavor of cassia* as cinnamon, but the only true cinnamon is Ceylon cinnamon - the inner bark of the Cinnamomum verum tree (the cinnamon tree), native to Sri Lanka. Harvested by hand in Sri Lanka, our Ceylon cinnamon sticks have a complex flavor that is delicately sweet, and slightly spicy, with a note of citrus. *In the US, because of the similarities in flavor, we generally recognize cassia as cinnamon (bark from cassia trees have a higher essential oil content than true cinnamon bark, giving cassia a more pronounced flavor and aroma than true cinnamon).
